6. Arabic Chickpea Rice (Nokhod Polo)

– Sauté the onions in oil until softened, then add the ground meat and cook briefly. 

– Rinse and add the chickpeas that you soaked overnight. 

– Season with salt, pepper, turmeric, chopped carrots, cardamom, cinnamon, and thyme. 

– Add water and close the pressure cooker lid. The cooking time is around 20 minutes, which you can adjust as needed. 

– When done, transfer the rice to a pot and add the ingredients to let it steam. Be careful not to add too much water to prevent the rice from getting mushy.

7. Arabic Buried Rice (Medfouneh) Recipe

2. Rinse the rice and cook it in boiling salted water until it reaches the draining point, then drain excess water.
